La concentration d\u2019un oligo\u00e9l\u00e9ment dans le corps humain est inf\u00e9rieure \u00e0 50 mg par kilo de poids corporel. Comme nous devons trouver ces oligo\u00e9l\u00e9ments dans notre alimentation, ils sont dit essentiels, autrement dit indispensables. En g\u00e9n\u00e9ral, nous en absorbons des quantit\u00e9s suffisantes. Mais une alimentation peu vari\u00e9e, certains r\u00e9gimes ou des troubles de l\u2019absorption li\u00e9s \u00e0 certaines maladies de l\u2019intestin peuvent induire des apports insuffisants et des sympt\u00f4mes de carence. M\u00eame chose quand les besoins sont accrus, par exemple chez les femmes enceintes ou allaitantes. Des apports excessifs ne sont g\u00e9n\u00e9ralement possibles qu\u2019en cas de consommation de compl\u00e9ments alimentaires hautement dos\u00e9s ou d\u2019aliments sp\u00e9cialement enrichis.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Fer<\/h2>\r\n\r\n\r\n\r\n<p>Bien que la concentration de fer dans l\u2019organisme se situe entre 50 et 60 mg\/kg de poids corporel, ce m\u00e9tal est g\u00e9n\u00e9ralement aussi class\u00e9 parmi les oligo\u00e9l\u00e9ments. Le fer est un constituant important de l\u2019h\u00e9moglobine (le pigment rouge du sang) et de la myoglobine, une prot\u00e9ine pr\u00e9sente dans les muscles. Il est donc indispensable pour le transport et le stockage de l\u2019oxyg\u00e8ne. Le fer joue aussi un r\u00f4le important pour le bon fonctionnement du syst\u00e8me immunitaire et la production d\u2019\u00e9nergie.Selon la Soci\u00e9t\u00e9 Suisse de Nutrition, les besoins journaliers en fer sont de l\u2019ordre de 11 \u00e0 16 mg chez les adultes de 18 \u00e0 65 ans, en sachant qu\u2019on n\u2019en absorbe qu\u2019une toute petite partie. Le fer h\u00e9minique (d\u2019origine animale) est mieux assimil\u00e9 que le fer non h\u00e9minique d\u2019origine v\u00e9g\u00e9tale. Dans les produits carn\u00e9s, le boudin noir et le foie sont particuli\u00e8rement riches en fer. On en trouve aussi, entre autres, dans le cacao en poudre, la farine de soja, les graines de courge, les lentilles s\u00e8ches et les flocons de millet.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Iode<\/h2>\r\n\r\n\r\n\r\n<p>L\u2019iode n\u2019est pas un m\u00e9tal mais un halog\u00e8ne \u2013 un gaz pouvant former des sels, tout comme le fluor. L\u2019iode est solide \u00e0 temp\u00e9rature ambiante. Il est essentiel \u00e0 la synth\u00e8se des hormones thyro\u00efdiennes. Une carence en iode peut entra\u00eener un grossissement de la thyro\u00efde (goitre). Nous devons consommer chaque jour 150 \u00b5g d\u2019iode, ce qui correspond \u00e0 6 g de sel de cuisine iod\u00e9, notre principale source d\u2019iode. Les algues marines, les poissons de mer, le fromage r\u00e2p\u00e9, les \u0153ufs de poule, la doucette ou le s\u00e9r\u00e9 maigre sont d\u2019autres sources int\u00e9ressantes d\u2019iode.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Chrome<\/h2>\r\n\r\n\r\n\r\n<p>Le chrome, un m\u00e9tal argent\u00e9, a \u00e9t\u00e9 d\u00e9couvert par Louis Nicolas Vauquelin en 1798 \u00e0 Paris. On pense que les compos\u00e9s de chrome3+ influencent l\u2019action de l\u2019insuline et am\u00e9liorent la r\u00e9sistance au glucose. Nous devons consommer 30 \u00e0 100 \u00b5g de chrome par jour. Les germes de bl\u00e9, les noix du Br\u00e9sil, le gouda, l\u2019\u00e9dam, la levure de bi\u00e8re, la viande de b\u0153uf, le pain au bl\u00e9 complet et les dattes s\u00e8ches en sont de bonnes sources.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Cuivre<\/h2>\r\n\r\n\r\n\r\n<p>Ce m\u00e9tal connu d\u00e8s l\u2019\u00c9gypte ancienne participe au syst\u00e8me antioxydant qui contr\u00f4le notamment la formation des radicaux libres et autres esp\u00e8ces r\u00e9actives de l\u2019oxyg\u00e8ne (ERO) qui entra\u00eenent un stress oxydatif et peuvent endommager ou m\u00eame d\u00e9truire les mol\u00e9cules et les cellules. Les besoins quotidiens en cuivre sont de l\u2019ordre de 1,3 \u00e0 1,6 mg. Le foie, les l\u00e9gumineuses, les hu\u00eetres, les produits \u00e0 base de cacao, les noix et les flocons d\u2019avoine sont de bonnes sources de cuivre.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Mangan\u00e8se<\/h2>\r\n\r\n\r\n\r\n<p>Activateur de plus de 60 enzymes, ce m\u00e9tal gris clair est important pour de nombreuses fonctions corporelles. Les apports journaliers recommand\u00e9s sont de 3,0 mg. On le trouve dans les germes de bl\u00e9, les flocons d\u2019avoine, les l\u00e9gumineuses, le son de bl\u00e9, les c\u00e9r\u00e9ales, les produits aux c\u00e9r\u00e9ales compl\u00e8tes et les noix.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Molybd\u00e8ne<\/h2>\r\n\r\n\r\n\r\n<p>Comme le mangan\u00e8se, le molybd\u00e8ne est un m\u00e9tal n\u00e9cessaire pour l\u2019activation de nombreuses enzymes. Nous devons en consommer 65 \u00b5g par jour. On le trouve notamment dans les l\u00e9gumineuses, les flocons d\u2019avoine, les germes de bl\u00e9, les c\u00e9r\u00e9ales et produits \u00e0 base de c\u00e9r\u00e9ales, les abats (foie et rognons) et les noix.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">S\u00e9l\u00e9nium<\/h2>\r\n\r\n\r\n\r\n<p>Ce semi-m\u00e9tal soutient les d\u00e9fenses immunitaires, est notamment important pour l\u2019activation des hormones thyro\u00efdiennes et prot\u00e8ge les cellules des radicaux libres. Les apports recommand\u00e9s sont de 70 \u00b5g\/jour. Le s\u00e9l\u00e9nium est pr\u00e9sent dans les noix (du Br\u00e9sil, de cajou et les arachides), les p\u00e2tes aux \u0153ufs, les produits c\u00e9r\u00e9aliers, les \u0153ufs, la viande et le poisson.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Zinc<\/h2>\r\n\r\n\r\n\r\n<p>Ce m\u00e9tal entre dans la composition de nombreuses enzymes et hormones; il est aussi important pour le syst\u00e8me immunitaire, le stockage de l\u2019insuline et la synth\u00e8se de l\u2019ADN. Les valeurs de r\u00e9f\u00e9rence chez l\u2019adulte sont de 7,5 \u00e0 16,3 mg\/jour. Les abats, la viande, le poisson, les \u0153ufs, les graines de tournesol, les lentilles s\u00e8ches, les c\u00e9r\u00e9ales, les f\u00e8ves de soja (tofu) et les noix communes en sont de bonnes sources.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Fluor\u2009\/\u2009fluorure<\/h2>\r\n\r\n\r\n\r\n<p>Le fluor est n\u00e9cessaire \u00e0 la construction des os et des dents. Il n\u2019est plus consid\u00e9r\u00e9 comme un oligo\u00e9l\u00e9ment essentiel mais comme il est tr\u00e8s important pour la pr\u00e9vention des caries, il est ajout\u00e9 \u00e0 de nombreux dentifrices. Les enfants et adolescents ont besoin de moins de fluor que les adultes, dont les besoins sont de l\u2019ordre de 2,9 \u00e0 3,4 mg\/jour. Un surdosage entra\u00eene l\u2019apparition de taches blanches \u00e0 brunes sur les dents. En Suisse, la premi\u00e8re source de fluor est le sel de table fluor\u00e9 (250 mg\/kg). De m\u00eame, certains aliments ou composants alimentaires peuvent influencer leur absorption. L\u2019acide phytique, une substance bioactive pr\u00e9sente dans les c\u00e9r\u00e9ales, les l\u00e9gumineuses et les graines ol\u00e9agineuses, forme des compos\u00e9s indigestes avec le cuivre, le mangan\u00e8se et le zinc. Le zinc d\u2019origine animale est d\u00e8s lors mieux assimilable que celui d\u2019origine v\u00e9g\u00e9tale. Le caf\u00e9 et le th\u00e9 \u2013 riches en polyph\u00e9nols \u2013 et les produits laitiers \u2013 riches en calcium \u2013 rendent plus difficile l\u2019absorption du fer et de la vitamine C tandis que la viande et le poisson l\u2019am\u00e9liorent.<\/p>\r\n<\/div>\r\n<\/div>\r\n\r\n\r\n","protected":false},"excerpt":{"rendered":"<p>Nous n\u2019avons besoin de certains nutriments qu\u2019en tr\u00e8s petites quantit\u00e9s.
